Gluten free premixes

Tamboja has a number of gluten free premixes available, White bread, Brown bread, Chocolate sponge and muffin mix, Vanilla sponge and muffin mix.

White bread

Rice flour, tapioca starch, fibre, yeast, salt,  zanthum gum sugar.

200g premix, 250ml water, 25ml oil. Beat for 7 minutes and poar into ½ loaf pans. Smooth the top of the batter with the back of a spoon that has been dipped into oil (TO PREVENT CRACKING) Cover and leave in a warm dark place to rise. Bake for 45min at 180’c. Makes 1 loaf.

 Brown bread

Rice flour, tapioca starch, ground flaxseed, fibre, yeast, salt, sugar, zanthum gum, cocoa powder (pure)

200g premix, 250ml water, 25ml oil. Beat for 7 minutes and poar into ½ loaf pans. Smooth the top of the batter with the back of a spoon that has been dipped into oil (TO PREVENT CRACKING) Cover and leave in a warm dark place to rise. Bake for 45min at 180’c. Makes 1 loaf.

 Chocolate cake/muffin mix

Rice flour, tapioca starch, potato starch, maize flour, cocoa powder, sugar, salt, fibre, zanthum gum

400g premix, 1 egg, 50ml oil, 400ml water. Mix all ingredients in a bowl with a wooden spoon. Baking time with vary depending on size of cakes (+/- 45 min) or muffins (12-15min). for a denser product less water more oil

Eggless - 400g premix,100ml oil, 400ml water. Mix all ingredients in a bowl with a wooden spoon. Baking time with vary depending on size of cakes (+/- 45 min) or muffins (12-15min).

Swiss Roll - 400g premix, 2 eggs whites, 50ml oil, 400ml water. Beat egg whites separately. Mix all other ingredients in a separate bowl. Gently fold into each other and lay out on a swiss roll pan. Bake at 180’c for 15-18min. Roll while still warm.

 Vanilla muffin / cake mix
